Chicken Sausage, Spelt and Pepper Skillet (with a vegan swap)

There’s nothing that says ‘comfort’ like a warm skillet and when it comes to flavor, color and texture, this hits on all cylinders.

My Chicken Sausage, Spelt and Pepper Skillet from my book, Eat Like You Give a Fork: The Real Dish on Eating to Thrive, combines protein (you can swap a plant-based sausage like LightLife or Beyond Meat, or do tempeh), slow burning superfoods grain and veggies to the table in a meal that satisfies and literally brings itself together in the oven. The grain cooks perfectly in the oven because there’s plenty of liquid to drink up. A great family meal when it gets coupled with a fresh salad and maybe an extra scoop of spelt.

PRO-TIP: If you can’t find spelt, long grain brown rice is a good swap.

Creamy Italian-Style Tomato Basil Soup

 
If you ever thought Campbell's set the standard for tomato soup, then your tastebuds matured past the 2nd grade, you probably realized it was pretty gross. That flat, flimsy liquid tomato paste should probably just stay in the iconic can as kitchen decor.

High Protein Mediterranean Pasta Salad

 

A hearty pasta salad that keeps it light, fresh and nutrient-dense.

Give me a great pasta recipe that's also high protein and low carb and it's on repeat in my household! The combo or artichoke hearts, garbanzo beans and tomatoes with that yummy vinaigrette just hit right and remind me of wonderful times studying in Italy when I was in college.

Garlic and Rosemary Baked Olives

National Garlic day is a must to celebrate! 

INGREDIENTS: 

  • 24 ounces mixed pitted olivies (kalamata, Castelvetrano, Sicilian, colossal, and any other varieties)
  • 2 tablespoons olive oil 
  • 3 garlic cloves, minced
  • 1 tablespoon chopped fresh rosemary leaves 
  • 1/2 teaspoon lemon zest
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground white pepper 

DIRECTIONS: 

  1. Preheat the oven to 400F.
  2. In a medium bowl, combine the olives, olive oil, garlic, rosemary, lemon zest, lemon juice, sea salt, and white pepper. Spread the olives over a rimmed baking sheet and roast for 15-20 minutes, until sizzling. Let cool. 
  3. Serve the olives or store in a seal jar in the refirigrator for up to 21 days.

Happy first day of winter!

I can't believe we're here already.  It's the first day of the winter solstice and Christmas is right around the corner.  Even though I live in Southern California, it can get cold at night and there's nothing that I love more than a nice curry.  Hence, my inspiration for this gorgeous comfort dish using the easy and delicious meals from Kevin’s Natural Foods for the #kevinsrecipechallenge. 

SO… here’s my take twist on two ultimate comfort dishes - chicken pot pie meets shepherd’s pie – made healthy for your fit lifestyle

And I'm calling it Chef Mareya’s Royal Thai Curry Chicken Pie.

I love taking traditional recipes and turning them on their head, but keeping them gluten-free, dairy-free and super delish. So I replaced the crust with a blanket of this gorgeous-colored purple sweet potato mash and an edging of crispy eggplant to look like a ‘pie’.  I always pick purple...

The Ultimate Frozen Buddha Bowl

Spring keeps calling you to try this frozen buddha bowl! 

INGREDIENTS: 

  • 1/2 frozen banana, peel left on
  • One 3.5 oz. packet frozen no-sugar-added acai or pitaya
  • 1 teaspoon ground flaxseed
  • 1/4 cup unsweetened non dairy milk (almond, rice, coconut, soy, hemp) 
  • 1/2 teaspoon spirulina powder 
  • 1/2 teaspoon raw honey

Optional Toppings:

  • Pomegranate arils 
  • Fresh pataya and lychee fruit 
  • Grape halves 
  • Hulled sunflower seeds or raw hemp hearts
  • Maca powder 
  • Unsweetened cocoa powder

DIRECTIONS: 

  1. Wash the ALL fruit with eatCleaner Fruit and Vegetable Wash and pat dry with paper towels.
  2. In a food processor or blender, combine the banana, acai, flaxseed, milk and coconut oil. Blend on medium to high speed for 15 to 30 seconds, until smooth and creamy. Pour into a bowl and add the yoghurt, spirulina, and honey. Stir until completely smooth.
